Que Pasa Calabaza?
There are two types of people, the kind that go into the grocery store and stick to their list and the kind that come out with 10 random things that they didn’t need but are more than willing to test out. I am the latter, and I can’t help but go into HEB and find something that I MUST try. If you’re not from Texas and don’t know about HEB, let me tell you, there is a reason that people have an obsession with it. They do an amazing job with their OWN brand, now I know a lot of grocery store brands are meh and sometimes okay, but when I go to HEB a lot of times I prefer their OWN brand over a mainstream brand. They are also on the cutting edge and with the trends when it comes to new products. So once it dropped below 90 degrees, you can imagine how pumpkin obsessed all us Texans became. Well, while perusing these aisles I found this fun pumpkin spice baking mix, and had to try it. It will quickly go to the top of my grocery list each fall.
Right now is the season where everyone expects you to bring something to whatever gathering, and I’m not sure about you, some weeks something made from scratch is just not going to happen. There are some box mixes out there that with a little help of some added ingredients can really fit the bill and look outstanding at your next together.
A few additions I added to the box muffin recipe mix, just to make it look a little more made from scratch, was I added in 1/2 cup of pumpkin puree, and when I put the batter in each muffin mold, I topped them with pumpkin seeds. As it bakes, they add a nice little crunch. Another addition I would do next time for a more decadent muffin would be to add a little streusel topping.

3/4 cup of brown sugar
3 Tablespoons of all purpose flower
1 tsp of pumpkin pie spice
2 Tablespoons of melted butter
Mix all of these ingredients by hand and after you put the muffin batter in each mold, top with a tablespoon of this topping and the pumpkin seeds, bake as directed and enjoy!
